13511 Posted October 2, 2017 Posted October 2, 2017 What's wrong with Kingsford? Kingsford is a briquette charcoal product. Many consider it (an briquettes in general) the "fast food" of charcoal. It's cheap, found everywhere and typically made with wood by-products with additives compressed in them to make them burn better. You frequently get a "chemical" smell from most of them, even Kingsford. That's why when you have to reload a pit you can smell an acrid odor when it starts burning - which can impart a flavor to the meat. Found where the Kingsford site used to have listed (partial) it containing coal, limestone, borax and cornstarch in their briquettes. Lump charcoal is PURE wood charcoal, tends to burn hotter and is great for searing meats in a grill. One of the downfalls of it is the inconsistency in the size of the lumps make for variable burn times. I've found that it doesn't last as long typically (when there are a higher number of smaller lumps) in a pit compared to briquettes. I have tendency to pick the largest pieces out and put them in another container to use for the smoking and use the smaller ones when I am cooking steaks, etc. In the type of pits I use now lump tends to do really well for me. The BEST BBQ doesn't even use charcoal but seasoned regular wood. Some of the best tasting I've ever done was with pecan limbs when a neighbor had her trees pruned and I got to go over and get the "pick" of what was taken down. Took it and set it aside and let it dry for about 3-4 months and then used it and made some awesome smoked brisket and ribs.
